Dishing Up is a podcast that goes off the beaten track to countries and cuisines we may not know about.
The podcast, from Larder Magazine, tours countries like Azerbaijan, Malta and Indonesia to speak to chefs about their culinary traditions, favourite dishes from home and earliest memories of cooking.
Created by students at City, University of London, it is hosted by Mariam Aziz and Millie Jackson. There are also Light Bites – mini episodes focusing on an ingredient that is special to a student, such as saffron, crúibín (pig’s trotters) and za’atar.
Guests lined up for the series are Omar Alibhoy – ‘The Spanish Chef’, a frequent on Saturday Kitchen who has worked alongside Gordon Ramsey, Jamie Oliver and Paul Hollywood, Adriana Cavita – owner of Cavita, the Mexican restaurant in Marylebone and former chef at two Michelin-starred restaurants, Norman Musa – a Malaysian chef who has appeared on Malaysian MasterChef, Sunday Brunch and is the Kuala Lumpur Food Ambassador and Fadi Kattan – a Franco-Palestinian chef and author of Bethlehem, a celebration of Palestinian food.
The series is a limited run, launching on all podcast platforms from 11 March, with episodes released Mondays, Wednesdays and Fridays, plus “minisodes” on Tuesdays and Thursdays.
